Then it is shipped to Williams & Humberts installations in Jerez (Spain), where the rum is aged for another 3 years in casks that have previously held the internationally renowned Dos Cortados palo cortado sherry (aged for 20 years, as certified by the Jerez Xrs Sherry Regulatory Council).
