The Diwalds, organic in the Wagram since the '70s, blend two soil types here: gravel for citrus lift, loess for riper apricot roundness. Hand picked, spontaneously fermented in steel, and rested on the lees, it comes out essentially dry, high toned, and mineral. Riesling for people who like it taut, honest, and
